Low Carb Snickerdoodle Cookies

Snickerdoodle Cookies

2 cups almond flour (the more fine the better)

½ cup unsalted softened butter

½ tsp baking soda

1 scoop Dr. K Collagen Powder (this is what makes it chewy)

Small pinch of salt

½ cup erythritol granulated sweetner (Laktuno or Swerve are great options)

Big pinch of cinnamon

Cinnamon Topping

1 tbsp erythritol granulated sweetner

2 tbsp cinnamon

Combine together in a small bowl

  1. Preheat oven to 350 degrees
  2. Mix all ingredients in a bowl until it becomes a stiff ball
  3. Use a cookie scoop or roll the dough into 12-16 cookies depending on how big or small you want your cookies
  4. Flatten cookies with you a fork or your fingers
  5. Sprinkle cinnamon topping on cookies
  6. Bake for 13-15 minutes depending on your oven Watch it closely as they can burn easily.
  7. If you have any remainder cinnamon topping, then sprinkle on top of cookies as soon as you take them out of the oven.
  8. Let cool completely and devour!
